"Very High Polarization", popularly known as VHP, is raw sugar that still has the layer of honey covering the sugar crystal, which is why its color resembles that of honey. The main characteristic of this sugar is its lower moisture content compared to the others. Its individuality of having a high polarization allows it to be refined, as well as being used for various industrialization processes in which it acts as a raw material. Although it can be used for consumption, its greatest demand is generally for export, with a view to being refined. ICUMSA 800-1200 is 100% refined raw sugar and is produced after the first crystallization of the sugar cane. This sugar is thicker than white sugar and its color is brownish. Raw brown sugar from sugar cane, when fully refined, contains around 70% white sugar.

Known today as Crystal sugar, it is widely used in large-scale baking and in the production of beverages and foods. Formed by the crystallization process, without chemical refining, crystal sugar serves as a lower-cost substitute for Icumsa 45 sugar, known as traditional white sugar, especially as it contains fewer chemicals in its composition.
